VINTAGE: 2018— Cool Springtime, late bud-break and early heat︎ in late May & June. Mid- summer there was a lull in the heat︎but then picked up︎ and held through August. It cooled︎ off in early September just before optimal harvest time with very little ︎ rainfall during picking dates. FERMENTATION/ÉLEVAGE: Fully destemmed fruit. Co-fermented by native yeast and macerated on the skins with daily pigeage for the duration of the primary fermentation— which took place over 2 weeks. Malolactic fermentation occured in neutral barrels through the winter and finished before bottling unfined /unfiltered in the spring.
BOTTLING DATE: APRIL 24,2019 The wine rested in bottle for 7 months before release.
COLOR: Becomes a very VIBRANT & TRANSPARENT RUBY in the glass. Almost luminescent.
NOSE: Grapefruit, Strawberry, Hibiscus and Raspberry Tea. PALETTE: Fine tannin and lifted acidity give elegant texture. Red apple skin, cranberry, subtle spices
